It's not gourmet, it's not high end, it's not fancy. It’s basic in its truest form.
3 squares Manischewitz Matzo, crumbled
1 pinch salt
Oil or butter for frying
Jam or cinnamon sugar for serving.
Crumble matzo into a large bowl. Submerge in water for 15 seconds then drain. Whisk eggs and pour over wet matzah crumbles. Add salt and mix to form a loose batter. Heat a small frying pan over medium heat. Melt butter or oil, then add matzah mixture and spread to flatten. When slightly crisp and golden, flip the pancake.
